Question for Catholic Priests: Is There A Need For Legions of Eucharistic Ministers?

This writer, undoubtedly of the Traditional persuasion, asks:

"…when there are three priests and two deacons assigned to a parish, why is there a need to have legions of Eucharistic ministers to assist with distribution at each Mass?"

The key phrase in our diocese would be "when there are three priests and two deacons assigned to a parish". In most of the parishes in my city there is one priest assigned to two parishes, sometimes more, occasionally less. There's only so much one person can do, particularly with the rules regarding reception under both species, and anyway, they're not all able to bilocate...
